"The Golden Compass (His Dark Materials) has some of the best polar bear illustrations and interactions that I have read in a book to date. I really like how the book in particular goes into great detail talking about polar bears and what their life is like. I also found Lyra's adventures and backstory to be extremely interesting as well. "

"If "books with polar bears" has a specifically fairy tale angle, then I can agree this is a good example. But there are other books where polar bears feature more prominently, both in fiction and nonfiction. "
